Spicy sliced pork belly known as Gochujang Samgyupsal is grilled over charcoal or tabletop grill. Grill on a pan is another way of cooking it. Usually, Samgyupsal is not marinated and just seasoned with salt. However diverse versions of Samgyupsal in wide array of sauces are being served in many Korean restaurants. Typically it is eaten with steamed rice. *Ssam is also a popular way of enjoying Samgyupsal dishes.

*Ssam, meaning “wrapped”, refers to a dish in Korean cuisine in which, usually, leafy vegetables (commonly used Korean perilla leaf and lettuce) are used to wrap a piece of meat such as pork or other fillings with a bit of *Ssamjang and a piece of garlic together.

*Ssamjang is is a thick, spicy paste used with food wrapped in a leaf in Korean cuisine. The sauce is made of Doenjang (Korean soybeen paste), sesame oil, onion, garlic, green onions, and optionally some sugar. It can be purchased at Korean or Chinese supermarket nearby. Ssamjang is also best known as a Korean BBQ dipping sauce. It has mildly spicy and salty flavor with nutty fragrant. And, most importantly it compliments well Korean pork dishes.

Spicy Sliced Pork Belly (Gochujang Samgyupsal)

  1. Preheat grill pan with oil and place a piece of marinated sliced pork belly in a medium temperature and grill it both side until well cooked. Be careful with the temperature as it can be easily burnt. (Tip : Do not flip the Samgyupsal too frequently as the marinated sauce can be easily burnt)
  2. While cooking, gently mix thinly sliced spring onions with seasoning and place it nicely onto a dish.
  3. Cut it in small pieces and eat it with seasoned thinly sliced spring onions.
  4. If available, Charcoal or Oven grilled Gochujang Samgyupsal with lettuce or perilla leaf Ssam is the best way of enjoying Gochujang Samgyupsal.
